instructions :Jollof rice with veggies with peppered chicken and goat meat
Diced all my veggies.... Carrots...green chilli and red pepper... Green bell pepper and yellow pepper.. Onion.
Washed and per boiled my rice.
Blended my tomatoes.....pepper with lots of onion with tatashe and red chilli pepper.
Boiled my marinated chicken and goat meat separately so I can have different stock.
Fried my groundnut oil when it was hot enough I added onion to it.... Allowed it fry a bit golden then I poured in my blended tomatoes and pepper and let it to fry well for like 25 mins.
Now my meat is cooked.... Took out the fry pan... Put in groundnut oil and let it get hot then I fried my chicken a bit Golden....I dont like fry dry chicken... Did same to my goat meat but allowed the goat fry more than the chicken.
My stew is boiling and then I take some out for my stew and put in my fried goat and chicken and added more Cameroon black pepper/with dry pepper grinded by myself....I eat a lot of pepper for those that don't...no need to add more...added my knorr and maggi star and master chef chicken and salt..and left it to stew better.
Now back to my rice..... Now my ready made stew for my jollof rice is still bubbling on the cooker...I add my supreme jollof rice spice..salt... Maggi star.... Knorr and master chef.... And I let boil more till is properly dry like it's about to burn under......added water to my stew(hot) and then added in my rice and bay leaves.
While that's cooking I put butter in my pan.... And fried my veggies added curry...maggi and salt allowed it to steam in butter for 7mins (I want to retain my crunchy veggies but also at tasty Also) put the heat put.
Now my pepper stew is ready and chilling..... Checked my rice and the water in it was way down so I poured in my stir fried veggies in butter....(I didn't mix I it cos the rice still had water in it) and covered the pot...I don't like mashed up rice so I kept putting water into it gradually and kept checking my texture till I got wat I wanted and didn't need to add more water.....
Now my rice is ready....I stir all my veggies in into in and sprinkle more onion for crunch..... And served.
Remove chicken from pot and set aside.
